The meal begins with a special salad featuring soft yuba (tofu skin), followed by our "Homemade Dashi Rolled Omelet," an original creation using luxurious Kyoto "Furusato Kyo Tamago" eggs and rolled in our finest dashi broth. The dashi is made from bonito flakes from Makurazaki and Rishiri kelp from Hokkaido, and the broth seeps out over time, making it a dish we're very proud of.
